CHEESE OF THE MONTH- 6 month matured Manchego
Manchego (officially Queso Manchego) is a cheese made in the La Mancha region
of Spain from the milk of sheep of the Manchega breed. It has a firm and compact
consistency and a buttery texture, and often contains small, unevenly-distributed
air pockets. We're currently stocking a delicious 6 month aged variety and offering
10 % off the price for this month.

BOOK OF THE MONTH- LEON - Naturally fast food
by Henry Dimbleby and John Vincent
Leon first opened in London in 2004 with the aim of producing fast food that tastes
good and does you good. This book and the success of their now 9 restaurants is
testimony to the success of these principles. Full of delicious and bold flavoured
dishes, nothing in the book should take more than 20 minutes to make. A great book
for both the experienced cook, or ideal for all the young 'uns heading to college and
away from mammy's cooking... This book will save you a fortune on crappy pizzas and
takeouts!

Meet the Maker
- A Taste of Puglia - Olive oil
Bottled exclusively for Rua, this is a special olive oil with Mayo connections.
We've bought and bottled most of the oil produced on Ballyheane native Fionuala
McKenna's organic farm in the sun drenched hills of south Italy. This superior
extra virgin olive oil is fabulous drizzled over meat, fish and vegetables or as an
ingredient in dressings and marinades.

Night time.
We're continuing to run our last Friday of the month evenings upstairs at Spencer Street and we're
now taking bookings for Friday September 24th. It's a great night with a three course set menu, celebrating lots of delicious
local ingredients.

Recipe of the month
Herb crumbed flatfield mushrooms with Durrus cheese
We served these at our last dinner night and they proved
extremely popular. Very easy to make, the can be shallow fried in a pan,
baked in the oven, but we think that they're most delicious
deep fried at hight temperature for about 25 seconds.
They would be paticualrly deliciouss accompanied by some of Stephen Gould's
mixed leaves or rocket, and either Rua chilli relish or beetroot chutney, all
available from the delicatessen.
